For Texas, it’s a timely opportunity to showcase our growing oyster industry, and to connect local flavors with national conversations about resilience, sustainability, and community.

Texas Sea Grant & the Texas Oyster Industry
Texas Sea Grant works hand-in-hand with the oyster industry to support a healthy Gulf and a thriving seafood economy. From connecting harvesters and farmers with restaurants, to supporting science-based stewardship practices, to helping consumers understand where their seafood comes from, Sea Grant serves as a bridge between the coast and the community.
Our work with oysters includes:
- Supporting Local Producers: We help harvesters and farmers share their stories and connect with new markets.
- Sustainable Practices: We provide science-based guidance on coastal and fishery management to ensure oysters remain a resource for generations.

Texas Sea Grant and Josephine’s Gulf Coast Tradition are partnering to host At the Oyster Table Night, featuring fresh Gulf oysters prepared “Texas Style” with a Michelada Mignonette. The night will bring together local oyster harvesters, chefs, and seafood lovers for a true taste of the coast.

This event is part of a nationwide digital Sea Grant campaign highlighting the diverse oyster traditions of the United States and the vital role oysters play in coastal communities. Alongside Texas, events are taking place in New York, North Carolina, Florida, and Oregon all month long—making At the Oyster Table a coast-to-coast celebration of one of America’s most iconic seafoods.
